At five cooking stations,\u00a0volunteers stood over electric fry pans, dipping hot irons covered in sweet batter into hot, 420 degree, oil. The Polish group plans to make 700 cookies before the weekend.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2685\" title=\"Marcia the &quot;batter lady.&quot;\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2012\/08\/Marcia-the-batter-lady1.jpg\" alt=\"\" width=\"450\" height=\"598\" \/><\/p>\n<p>This is the fourth year Marcia (Kosik) McGrail has helped. She\u2019s the official batter maker, joking that when she first started frying, \u201cmaybe I wasn\u2019t doing it right, and I don\u2019t mind doing batter, next thing I know, I was put on batter.\u201d The rosettes are made from eggs, milk, flour, sugar, and salt, with a touch of rum. Marcia said that when her grandmother made them, she used brandy instead of rum.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2693\" title=\"Volunteers frying rosettes at the Dom Polski Social Club.\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2012\/08\/group-shot1.jpg\" alt=\"\" width=\"450\" height=\"330\" \/><\/p>\n<p>Frank Makarewicz, a relative newcomer, got advice from the \u201cmaster rosette maker,\u201d Eva Kalish. His crumpled soggy rosettes were soon replaced by perfectly formed crispy brown cookies. \u201cI need a rhythm,\u201d he commented. He will be in charge of making kielbasa sandwiches at this weekend\u2019s festival.<\/p>\n<p>\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2696\" title=\"Rosettes frying in pan.\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2012\/08\/rossettes-in-pan1.jpg\" alt=\"\" width=\"450\" height=\"320\" \/><\/p>\n<p>Rosettes only take a few seconds of frying\u00a0on each side before they&#8217;re done. When the iron covered in batter is first dipped into the hot oil, the cookies explode into flowers.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2699\" title=\"Two types of irons.\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2012\/08\/two-types-of-irons1.jpg\" alt=\"\" width=\"450\" height=\"339\" \/><\/p>\n<p>\u00a0The volunteers used two shapes of irons for a variety of rosettes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2702\" title=\"Jane putting rossettes in a box.\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2012\/08\/Jane-putting-rossettes-in-a-box1.jpg\" alt=\"\" width=\"450\" height=\"420\" \/><\/p>\n<p>Jane (Markiewicz) Duffley has cooked for a festival every year but one since 1974, first for the Regatta Festival, then the Lowell Folk Festival. She even worked two weeks before her wedding. Both her sisters are helping with the festival this year. I\u2019m \u201colder than Moses\u201d doing this, she said, as she scurried around, picking up the fresh, crispy cookies from each station and carefully lining them row by row into large boxes.<\/p>\n<p>\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2705\" title=\"Finished rosettes for sale at the festival.\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2012\/08\/finished-rosettes-for-sale-JFK-edit1.jpg\" alt=\"\" width=\"450\" height=\"303\" \/><\/p>\n<p>The Polish group expected to sell out of rosettes as usual this year.
