{"id":3651,"date":"2013-07-23T04:55:39","date_gmt":"2013-07-23T09:55:39","guid":{"rendered":"https:\/\/blog.massfolkarts.org\/blog\/?p=3651"},"modified":"2015-03-02T13:31:53","modified_gmt":"2015-03-02T18:31:53","slug":"customized-fruit-carver-comes-to-the-lowell-folk-festival","status":"publish","type":"post","link":"https:\/\/blog.massfolkarts.org\/index.php\/2013\/07\/customized-fruit-carver-comes-to-the-lowell-folk-festival\/","title":{"rendered":"Customized fruit carver comes to the Lowell Folk Festival"},"content":{"rendered":"<p><iframe loading=\"lazy\" src=\"\/\/www.youtube.com\/embed\/tCTJIKTQO5A?rel=0\" width=\"450\" height=\"253\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<p>Earlier\u00a0this spring I was searching for someone who specializes in the tradition of carving fruits and vegetables to demonstrate at\u00a0the  <a href=\"http:\/\/www.lowellfolkfestival.org\/crafts.html\" target=\"_blank\">folk craft area <\/a>of the  <a href=\"http:\/\/lowellfolkfestival.org\/\" target=\"_blank\">Lowell Folk Festival. <\/a>\u00a0This year the theme is\u00a0carving traditions. After following up on\u00a0a few leads,\u00a0all within the Asian community, I eventually\u00a0gave up on trying to find someone to demonstrate this culinary\u00a0skill.<\/p>\n<p>Then, just six weeks shy of the festival,\u00a0I\u00a0received an email from Craig Gates of the  <a href=\"http:\/\/www.lowellfestivalfoundation.org\/\" target=\"_blank\">Lowell Festival Foundation<\/a>. He&#8217;d been contacted by\u00a0Ruben Arroco\u00a0inquiring whether he could demonstrate fruit carving at the festival this summer. Serendipity? As it turns out,\u00a0Ruben recently\u00a0demonstrated fruit carving at the Rock \u2018N Ribfest in Merrimac, New Hampshire. When\u00a0someone came up to him to ask if he would be at the Lowell Folk Festival this July, he thought to himself, &#8220;Why not?&#8221;\u00a0Hence, his inquiry. Craig passed him on to me, with the thought that it was probably too late and that I could \u201clet him down gently.\u201d Instead,\u00a0I was thrilled to learn of this local chef who\u00a0had trained in the Philippines, has been\u00a0an executive chef for 30 years, and\u00a0now specializes in customized fruit and\u00a0vegetable carvings.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3660\" title=\"Plate of fruit with carved mango by Ruben Arroco\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco1.jpg\" alt=\"\" width=\"360\" height=\"338\" srcset=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco1.jpg 400w, https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco1-300x281.jpg 300w\" sizes=\"auto, (max-width: 360px) 85vw, 360px\" \/><\/p>\n<p>So last week, Phil Lupsiewicz and I drove over to the Highlands neighborhood of Lowell to interview Ruben Arroco. Ruben, his wife, and daughter live in a newly built enclave of condominiums tucked into some lush foliage just off a busy street. Ruben welcomed us in, offering us freshly brewed coffee and slices of tiramisu cake. Presentation was done with the utmost care; the cake was served on white porcelain plates decorated with mango carved to look like roses. Amazed at the trouble he had gone to and delighted in sitting down to this unexpected afternoon treat, Phil and I readied our recording equipment.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3668\" title=\"Ruben Arroco readying watermelon to carve\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco10.jpg\" alt=\"\" width=\"360\" height=\"349\" srcset=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco10.jpg 400w, https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco10-300x291.jpg 300w\" sizes=\"auto, (max-width: 360px) 85vw, 360px\" \/><\/p>\n<p>Ruben placed a\u00a0round watermelon\u00a0on a rotating board,\u00a0securing its base with\u00a0a rolled dishtowel.\u00a0Then he picked up a very sharp tool and began to work. &#8220;I just start by looking for a nice surface and\u00a0just make a little peel. I peel that until I see a little red color. Like so. . .\u00a0\u00a0I\u2019m going to make the center petals of the flower. Most of the time they use a knife to make a circle \u2013 but I just use a cookie cutter to make a round shape. This is how it\u2019s started. See, I love that color right there, it\u2019s coming out, the red color. I ask if\u00a0fruit carving\u00a0is a relatively rare skill to have.\u00a0&#8220;It is.\u00a0<span style=\"font-size: 13px;\">This is actually a 700-hundred year old art that originated in Thailand.&#8221; <\/span><\/p>\n<p><span style=\"font-size: 13px;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3678\" title=\"Ruben Arroco carving a watermelon\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco6.jpg\" alt=\"\" width=\"450\" height=\"388\" srcset=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco6.jpg 450w, https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco6-300x258.jpg 300w\" sizes=\"auto, (max-width: 450px) 85vw, 450px\" \/><\/span><\/p>\n<p><span style=\"font-size: 13px;\"><img loading=\"lazy\" decoding=\"async\" title=\"Phil Lupsiewicz filming Ruben Arroco \" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco5.jpg\" alt=\"\" width=\"450\" height=\"338\" \/><\/span><\/p>\n<p>Ruben<span style=\"font-size: 13px;\"> learned to carve fruit\u00a0during\u00a0his training as a hotel chef in the Philippines. &#8220;There is a place in the\u00a0Philippines &#8212; Paete, Laguna &#8212; where people there make a living out of carving wood.\u00a0Some of those guys, I was lucky enough to work with in the hotel. . . If you see a chef doing this, most of the time, if you ask, &#8216;Are you from [Laguna]&#8217; the answer is yes. <\/span><span style=\"font-size: 13px;\">If you can carve wood, you can carve this &#8212; so I kind of learned it from them.&#8221; <\/span><\/p>\n<p><span style=\"font-size: 13px;\">Ruben picks up\u00a0a specialized tool he made which creates V-cuts in one movement. &#8220;Even just making simple V-cuts transforms it and gives it that nicer look. You go around making these V-cuts, like that. Separation of the petals from\u00a0the part that you carved, that&#8217;s very important. The part that is removed, they call that the negative side in the carving world. If you don&#8217;t remove that, you won&#8217;t see what you just carved.&#8221;<\/span><\/p>\n<p><span style=\"font-size: 13px;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3680\" title=\"Carved watermelon flower\" src=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco4.jpg\" alt=\"\" width=\"450\" height=\"383\" srcset=\"https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco4.jpg 450w, https:\/\/blog.massfolkarts.org\/wp-content\/uploads\/2013\/07\/RubenArroco4-300x255.jpg 300w\" sizes=\"auto, (max-width: 450px) 85vw, 450px\" \/><\/span><\/p>\n<p>I wonder aloud \u00a0if there is something hard about making art which is so ephemeral.\u00a0It can take from seven to\u00a0ten hours to create, yet it&#8217;s there to be consumed. Ruben says, &#8220;Even though it takes a long time to make, the best part\u00a0of it is when we bring it to the party and everybody likes it. Even though it took me seven hours to make, it always feels like it only took me a half hour when everybody likes it.&#8221;<\/p>\n<p>&#8220;Most of the time, we bring it to the party and then they call me back say, &#8216;We have a problem.&#8217; &#8216;What? Why, what happened.?&#8217;\u00a0\u00a0&#8216;Nobody wants to touch it!&#8217;\u00a0 So I tell them to find a kid and tell him or her it&#8217;s for them.
